Honey Dijon Chicken Salad with Avocado and Bacon

This is the kind of salad that makes you want to drool just looking at it. Chicken, bacon, tomatoes, avocado, onion, yum. Don't be intimidated by a good marinade either, especially when you can just use our vinaigrette kit! It is the marinade and the dressing for this salad. We highly recommend giving this a try!

 

Honey Dijon Chicken Salad with Avocado and Bacon

4 boneless skinless chicken breasts

1/4 cup diced bacon

4 cups lettuce, washed.

1 cup diced tomatoes

1 large avocado, pitted and sliced

1/4 of a red onion, sliced

1 Honey Dijon vinaigrette kit from B.S.M.

Prepare honey dijon vinaigrette dressing. Place chicken breasts in shallow container or plastic bag and add 1/3 cup of the vinaigrette. Marinade for 2 hours if time allows. Refrigerate unused dressing.

add 1 tbsp oil to nonstick pan or skillet and bring to medium heat. Cook chicken on both sides until cooked through. Set aside and allow time to rest. Fry bacon in skillet until crispy.

Slice chicken into strips. Prepare salad with lettuce, tomatoes, avocado slices, onion and chicken. Drizzle with Honey Dijon Vinaigrette to taste.
